CRUNCHY ROASTED POTATOES in herby yogurt

Ingredients

✨ INGREDIENTS✨

🌱 1 lbs potatoes (i used fingerling)
🌱 Avocado oil, salt, pepper

🌱 1/2 cup yogurt (I used almond Greek style)
🌱 1/4 cup mayo (I used plant- based made with avocado oil)
🌱 2 tbsp fresh dill, finely chopped
🌱 1 tbsp chives, finely chopped
🌱 1/3 cucumber, finely chopped
🌱 1 tbsp finely chopped red onions
🌱 1 lemon, juiced
🌱 2 garlic cloves, minced

Directions

✨ INSTRUCTIONS✨

🌱 Boil potatoes in salty water until soft to fork. Transfer onto baking sheet, smash and add oil, salt and pepper, bake at 425F for 40 min or until crispy. Crumble. Combine the rest of the ingredients in a bowl and add crunchy potatoes. Mix in well and serve.
