PLANT- BASED MOUSSAKA

Ingredients
✨ INGREDIENTS✨
🌱 3-4 medium potatoes, thinly sliced
For “meat”
🌱1 red onion finely diced
🌱 4 garlic cloves crushed
🌱2 cups walnuts (hold them in hot water for 30 min, drain then pulse in a food processor
🌱 1/4 cup sun- dried tomatoes, chopped up
🌱 1 lime juiced
🌱 3 tbsp soy sauce
🌱 salt, pepper, garlic powder to taste
🌱 1 tsp each paprika, cumin & oregano
🌱 2 tsp chili powder
Sauce:
🌱 1/4 cup oil of choice
🌱 3 tbsp cassava flour
🌱 2 cups almond milk
🌱 salt, pepper, garlic to taste + paprika
🌱 optional: 2 tbsp nutritional yeast
Directions
✨ INSTRUCTIONS✨
🌱 To make “meat”- Mix all the ingredients well in a skillet and sauté for 5-6 minutes (I like doing onion and garlic by itself for couple minutes first until translucent)
🌱 To make the sauce- In a heated pan over medium heat add oil and warm it up. Add flour and mix for 1-2 min to combine. Add milk and spices and keep stirring for a few minutes until it thickens
🌱 In a casserole dish lay potatoes, then “meat” mixture, potatoes again, “meat” mixture, another layer of potatoes to finish. Pour the sauce over and bake at 425F for 35-40 min
