Ingredients
β¨ INGREDIENTSβ¨
π± 1/2 cup quinoa or ancient grains (uncooked)
π± 1 can garbanzo beans
π± 1/4 red onion, finely diced
π± 1 cucumber, diced
π± 5-6 leaves basil, chopped
π± avocado oil, salt, pepper, garlic, paprika
π± Dressing
π± 2/3 cup sunflower seeds
π± 1 cup almond milk
π± 1/2 lemon juiced
π± 1 tsp dijon mustard
π± 1 clove of garlic
π± salt, pepper to taste
β¨ Orange ginger Tofu
π± 1 pack firm tofu, pressed
π± 1/4 cup cassava flour
π± 1/4 cup nutritional yeast
π± salt, pepper, garlic, paprika
π± 2 oranges
π± 1/4 cup maple syrup
π± 1 inch ginger, grated
π± 1/4 cup tamari sauce (soy sauce but Gf)
Directions
β¨ INSTRUCTIONS
π± Cook quinoa according to package instructions. Drain and rinse chickpeas then add oil & seasonings and bake at 425F for 30-35 min. Add dressing ingredients to a blender and blend until smooth. If you need to thin it out add water. Cube tofu and add it to the mix of dry ingredients. Shallow pan- fry for 5-6 min or until golden, add the wet ingredient mixture and let it simmer until thick and coated. Combine and serve
