Ingredients
✨ INGREDIENTS ✨
🌱 2 cups mixed greens
🌱 1/2 cup turmeric quinoa (cook quinoa in water with 1/2 tsp turmeric powder)
🌱 1 cup baked & cubed sweet potato
🌱 1 cup baked & cubed butternut squash
🌱 1 cup baked garbanzo beans (u will bake all 3 at 425F for 35 min in avocado oil, salt, pepper and garlic). I add paprika for chickpeas.
🌱 1/3 cup dried cranberries (no sugar added)
🌱 1/3 cup pumpkin seeds
🌱 1 apple, chopped
🌱 1/4 cup chopped pecans
✨ DRESSING✨
🌱 1/4 cup hummus
🌱 1 tbsp olive oil (optional)
🌱 1/2 lemon, juiced
🌱 1 tbsp tamari (gf soy sauce) or water
🌱 Spices- I did salt, pepper and garlic to taste
🌱 water if needed to thin
Directions
✨ INSTRUCTIONS✨
🌱 Bake your veggies and beans. Put it all together in a bowl. Mix the dressing in a jar, pour over and serve.
