GF/ DF ZUCCHINI FRITTERS in 4 ingredients and the most amazing tzatziki

These zucchini fritters are just delicious and so easy & fast to make!

Ingredients

✨ INGREDIENTS✨

🌱 3 medium zucchinis, grated
🌱 2 green onions, chopped
🌱 1 big handful cilantro (or parsley or both)
🌱 3/4 cup flour (I used cassava)

🌱 salt, pepper & garlic powder to taste

✨ TZATZIKI✨

🌱 1/2 cup yogurt (I use greek style almond)
🌱 Big squeeze of lemon
🌱 Drizzle olive oil
🌱 1/2 small cucumber, super finely chopped
🌱 Small handful chopped up dill
🌱 Salt, pepper, garlic powder to taste

Directions

✨ INSTRUCTIONS✨

🌱 Grate your zucchinis and sprinkle some salt on it. Let it sit while you are cutting up other ingredients. Strain in a milk bag/ gauze or whatever you have to remove as much water as you can (the more the better)
🌱 Combine the rest of the ingredients, give it a good mix and shape into patties
🌱 Pan- fry each side for a few minutes using a bit of oil of choice
🌱 Combine the sauce ingredients in a bowl
