CRUNCHY BROCCOLI SALAD as a complete meal

Ingredients

✨ INGREDIENTS✨

🌱 1 head broccoli (or 2 small heads broccolini)
🌱 1 carrot, shredded
🌱 1 cup red cabbage
🌱 6 pitted Medjool dates, chopped
🌱 1/2 can chickpeas, drained and rinsed
🌱 1/2 cup cashews
🌱 avocado oil & 1 tsp chili powder

Dressing:

🌱 1/2 cup cashews
🌱 Plant milky
🌱 1 garlic
🌱 salt, pepper, turmeric to taste
🌱 2 tbsp nutritional yeast
🌱 1/2 lemon, juiced

Directions

✨ INSTRUCTIONS✨

🌱 Chop up your veggies and mix in with dates. Mix chili powder and cashews then pan fry until golden for 2-3 min in a bit of avocado oil, then add to the bowl. Blend dressing ingredients on high using enough milk to just submerge cashews. Pour over the salad generously. Serve.
