ABSOLUTELY THE BEST SMASHED POTATOES

Ingredients

✨INGREDIENTS✨

🌱 18-20 baby potatoes
🌱 avocado oil, salt, pepper, garlic powder to taste

✨Pickled red onions

🌱 1/4 red onion
🌱 1/3 cup apple cider vinegar
🌱 1 tsp salt
🌱 1/2 tsp coconut sugar

Additional:

🌱 2 green onions

✨ Sauce ingredients

🌱 3 tbsp dairy- free yogurt
🌱 1 tbsp tahini
🌱 1 tsp dijon mustard
🌱 big squeeze of lemon
🌱 salt, pepper, garlic powder, paprika to taste
🌱 olive oil and/ or water to thin out

Directions

✨ PREPARATION✨

🌱 Add potatoes to a boiling salty water and boil on medium heat uncovered for about 20 min
🌱 Drain and transfer to a bowl where you will add oil, salt, pepper and garlic and mix. Transfer to a parchment paper lined baking tray. Smash with a glass then using a brush transfer the rest of the oil and spices mixture from the bowl or add more. BAKE at 425 F for 35 min or until edges look crispy
🌱 Cut red onions into strings and warm up vinegar with added salt and sugar until it dissolves then pour over onions to pickle. Let it sit til potatoes are ready (keep them upside down and regular if you are using a jar)
🌱 Mix all the sauce ingredients with a spoon
🌱 Lay potatoes, spoonfuls of sauce then drained pickled onions then green onions then sauce again 🤤
