POWERHOUSE SALAD
High in protein & nutritional value π Follow to get more healthy ideas ππ» This salad is so fun, so full of everything, itβs my newest obsession! Salads literally bring us back to life and salads should never be boring! I really dislike going out and ordering healthy plant- based, GF, refined oils free salad without a bunch of crap in the dressing because Iβd probably just get some leaves π So, I enjoy creating my own! I am never ever bored of salads πππ»β€οΈ
Ingredients
π± 3 cups fresh arugula π± 1 cup rainbow quinoa (I used ancient grains mix that has quinoa, buckwheat, millet, chia, amaranth & teff)- INSANE BENEFITS π± 1 cup slicing cucumbers π± 1 cup cherry tomatoes (I used local organic rainbow tomatoes) π± 1/2 red onion diced π± 1/4 cup kalamata olives pitted π± 1 can chickpeas (drained & rinsed) Dressing: π± 1/4 cup hummus π± 1 tbsp olive oil π± 1 tbsp maple syrup π± 1 tbsp lemon juice π± 1-2 tbsp water to thin out π± salt, pepper, garlic to taste (add little spice if u want a little kick- 1/2 tsp of cayenne, chipotle, chili powder etc)
Directions
π± Combine all the salad ingredients in a big bowl π± Combine all the dressing ingredients in a small bowl or mason jar and shake (i prefer jar- blends better) π± Pour the dressing over and enjoy π
