PLANT- BASED MOUSSAKA

Ingredients
β¨ INGREDIENTSβ¨
π± 3-4 medium potatoes, thinly sliced
For βmeatβ
π±1 red onion finely diced
π± 4 garlic cloves crushed
π±2 cups walnuts (hold them in hot water for 30 min, drain then pulse in a food processor
π± 1/4 cup sun- dried tomatoes, chopped up
π± 1 lime juiced
π± 3 tbsp soy sauce
π± salt, pepper, garlic powder to taste
π± 1 tsp each paprika, cumin & oregano
π± 2 tsp chili powder
Sauce:
π± 1/4 cup oil of choice
π± 3 tbsp cassava flour
π± 2 cups almond milk
π± salt, pepper, garlic to taste + paprika
π± optional: 2 tbsp nutritional yeast
Directions
β¨ INSTRUCTIONSβ¨
π± To make βmeatβ- Mix all the ingredients well in a skillet and sautΓ© for 5-6 minutes (I like doing onion and garlic by itself for couple minutes first until translucent)
π± To make the sauce- In a heated pan over medium heat add oil and warm it up. Add flour and mix for 1-2 min to combine. Add milk and spices and keep stirring for a few minutes until it thickens
π± In a casserole dish lay potatoes, then βmeatβ mixture, potatoes again, βmeatβ mixture, another layer of potatoes to finish. Pour the sauce over and bake at 425F for 35-40 min
