P.S. As someone that fought a tough case of IBD I know that broccoli isn’t right for everyone. That’s okay. Stay away from it while healing if it gives you bloating or gas or pain. Work on strengthening your gut, repairing the barrier, balancing out the good and bad bacteria and then slowly start introducing it again.

Ingredients

✨ INGREDIENTS✨

🌱 Mixed greens (I used protein greens- sweet pea leaves, baby spinach, baby bok choy, baby kale, mizuna, tatsoi)
🌱 1/2 cup ancient grains (quinoa, buckwheat, millet, chia, amaranth, teff) or rainbow quinoa
🌱 1 cup broccoli
🌱 1 cup shelled edamame
🌱 1 pack (10oz) pressed firm tofu cubed (coating- 3 tbsp cassava, 3 tbsp nutritional yeast, 1 tsp oregano, 1/2 tsp paprika, salt, pepper, garlic to taste)
🌱 1/2 avocado
🌱 1/4 cup shelled pistachios
🌱 1/4 cup pumpkin seeds
🌱 Green goddess dressing (small handful spinach, small handful parsley, 3 tbsp tahini, 1 garlic clove, 1 lemon juiced, 1/4 cup almond milk, salt & pepper to taste)

Directions

✨ INSTRUCTIONS✨

🌱 Pan- fry broccoli in some salt, drizzle of oil and pepper & garlic powder ). Cube tofu and coat. Pan fry 2-3 min each side on a bit of oil of choice (you can bake as well)
🌱 Cook edamame and ancient grains or quinoa according to package instructions
🌱 Combine the bowl, blend the dressing ingredients, pour over and serve. You could add some plant- based feta but it’s more than delicious without it as well.
