NOURISHING GREENEST BOWL

Ingredients
✨ INGREDIENTS✨
🌱 Mixed greens (I used protein greens- sweet pea leaves, baby spinach, baby bok choy, baby kale, mizuna, tatsoi)
🌱 1/2 cup ancient grains (quinoa, buckwheat, millet, chia, amaranth, teff) or rainbow quinoa
🌱 1 cup broccoli
🌱 1 cup shelled edamame
🌱 1 pack (10oz) pressed firm tofu cubed (coating- 3 tbsp cassava, 3 tbsp nutritional yeast, 1 tsp oregano, 1/2 tsp paprika, salt, pepper, garlic to taste)
🌱 1/2 avocado
🌱 1/4 cup shelled pistachios
🌱 1/4 cup pumpkin seeds
🌱 Green goddess dressing (small handful spinach, small handful parsley, 3 tbsp tahini, 1 garlic clove, 1 lemon juiced, 1/4 cup almond milk, salt & pepper to taste)
Directions
✨ INSTRUCTIONS✨
🌱 Shallow pan- fry broccoli in some salt, drizzle of oil and pepper & garlic powder ). Cube tofu and coat. Pan fry 2-3 min each side on a bit of oil of choice (you can bake as well)
🌱 Cook edamame and ancient grains or quinoa according to package instructions
🌱 Combine the bowl, blend the dressing ingredients, pour over and serve. You could add some plant- based feta but it’s more than delicious without it as well.
