NOT AN AVERAGE POTATO SALAD

Ingredients
✨ INGREDIENTS✨
🌱 2- 3 cups greens of choice (I used protein greens)
🌱 1 bag of baby potatoes (mine had 20)
🌱 1/3 red onion, finely chopped
🌱 2 green onions, chopped
🌱 1 bunch asparagus
🌱 1/3 cup lightly roasted pine nuts
🌱 Handful micro-greens
✨ DRESSING✨
🌱 1/4 cup olive oil
🌱 1/4 cup red wine vinegar
🌱 1 tbsp dijon mustard
🌱 3 tbsp tahini
🌱 salt, pepper, garlic powder, Italian seasoning to taste
Directions
✨ INSTRUCTIONS✨
🌱 Place potatoes and asparagus on a parchment paper lined baking sheet and roast at 425F for about 35 min. I like roasting mine in some avocado oil, salt, pepper and garlic powder. If asparagus is done earlier- remove it. Add pine nuts spread out on a small baking sheet within the last 7-8 min to lightly roast. Combine all the salad ingredients
🌱 Combine the dressing ingredients in a jar and shake well, then pour over and combine

INGREDIENTS
1/2 cup quinoa 200g chocolate 1/4 cup almond butter
INSTRUCTIONS
Fry quinoa in a non- stick pan (with non- toxic coating) for a couple minutes until golden. Add to melted chocolate along with the nut butter. Divide and place into mold, and set in the fridge for 45min.
