LOADED SAVORY CORN BREAD MUFFINS to die for!
Follow @waytohealthkitchen for more delicious recipes and healing tips 😍❤️ Okay guys, corn bread was a staple in my home growing up and while not very nutritional my mom and I made it plant- based and loaded up with a few veggies to give it more of a nutritional value. These disappeared as soon as we made it and I hope you will love it as much as we do! I don’t normally use corn due to the aflatoxins and when I do it, it has to be organic!
Ingredients
✨ INGREDIENTS✨
Dry:
🌱 1 1/2 cups all purpose regular or GF
🌱 1 1/2 cups corn flour (I used masa harina)
🌱 1 tsp salt
🌱 1 tsp baking powder
Wet:
🌱 3/4 cup olive or avocado oil
🌱 2 cups mineral water
Mix- ins
🌱 1 large pickle, diced
🌱 1 large roasted pepper, diced
🌱 1 large carrot, shredded
Directions
✨ INSTRUCTIONS✨
🌱 Mix dry ingredients well. Add wet ingredients and mix. Add more water if needed to get to the shown consistency. Fold in veggies.
🌱 Pour into muffin liners or another baking dish of choice (I had enough for 14 muffins)
🌱 Bake at 425F for 45 minutes or until golden
