LAZY NOODLES WITH TOFU

My healing depended on introducing more veggies but that seemed impossible as I didn’t like most of them. I soon learnt that all the veggies I couldn’t stand eating just weren’t prepared to my liking, so I started exploring… One of my already vegan friends introduced me to Yondu and she said I had to try it! After giving it a go I wondered where it had been my whole life as every single meal I made with it got such a bold flavor, it was packed with rich and savory taste I couldn’t stop eating it! I put it in everything from my walnut taco meat, veggies, stir- fry, salads, I even once dipped my GF bread in it with some Brazil nut parmesan lol! Btw, I get it conveniently off Amazon! This recipe takes 10 minutes to put together and it will blow your mind how tasty it is 🤤
What you will also notice in my recipe is that I didn’t use any other seasoning as Yondu Vegetable umami sauce is packed with different veggies and organic soybeans- it needs nothing else!
Ingredients
✨ INGREDIENTS✨
🌱 1 shallot, diced
🌱 3 garlic cloves
🌱 2 cups frozen peas and carrot mix
🌱 3 tbsp Yondu vegetable umami sauce
🌱 1 pack high quality ramen noodles
🌱 1 green onion
🌱 black and white sesame to decorate
🌱 1/2 block (5oz) pressed tofu
🌱 1 tbsp each cassava flour and nutritional yeast
🌱 3 tbsp Yondu vegetable umami sauce
🌱 drizzle of date syrup (if you like salty- sweet mix)
Directions
✨ INSTRUCTIONS✨
🌱 Sauté shallot and garlic over medium heat for 1-2 min. Add carrots and peas, stir then add Yondu. Throw your noodles in, combine and serve. Top with green onion and sesame seeds
🌱 Cube your tofu (I prefer small cubes). Throw it in a mixture of cassava and nutritional yeast to lightly coat then throw in a pan over medium heat. Stir for couple of minutes, add Yondu and date syrup if using and mix for another 2 min then serve over noodles.
