You know my goal is always to keep you healthy and happy and never to not eat your favorite foods! That’s why I created this healthy lasagna that you will love so much yet your body will still feel great and thrive 💪🏻
I found this clean and organic traditional marinara sauce at Target and I had to try it 😍 I really love how they pair with my favorite foods and so far made spaghetti squash marinara, this skillet lasagna and baked rigatoni with it 🤤 and I am obsessed!
Ingredients
✨ INGREDIENTS✨
🌱 1 yellow onion, finely diced
🌱 3 cloves garlic, crushed
🌱 1 bell pepper, finely chopped
🌱 1 cup spinach, finely chopped
🌱 8 oz (200g) baby Bella mushrooms, finely chopped
🌱 1 cup walnuts, soaked then pulsed
🌱 salt, pepper & garlic to taste
🌱 1 tsp Italian seasoning & 1 tbsp tamari
🌱 18 oz Born Simple traditional marinara sauce
🌱 4 oz Born Simple spicy arrabbiata sauce
🌱 8-9 lasagna noodles, broken into thirds
🌱 Few spoonfuls dairy- free “ricotta” (I used home- made)
🌱 4 oz dairy- free mozzarella, melted
Directions
✨ INSTRUCTIONS✨
🌱 Soak walnuts in hot water for 30 min then pulse. In a skillet add all the veggies and sauté for few minutes. Add mushrooms and walnuts and sauté for 2-3 more minutes. Add the sauces and broken pasta and cook for 30 minutes mixing slightly every 5 minutes. Add ricotta and melted cheese and garnish with some chives and parsley.

INGREDIENTS
1/2 cup quinoa 200g chocolate 1/4 cup almond butter
INSTRUCTIONS
Fry quinoa in a non- stick pan (with non- toxic coating) for a couple minutes until golden. Add to melted chocolate along with the nut butter. Divide and place into mold, and set in the fridge for 45min.
