Ingredients
β¨ INGREDIENTS β¨
π± 2 cups mixed greens
π± 1/2 cup turmeric quinoa (cook quinoa in water with 1/2 tsp turmeric powder)
π± 1 cup baked & cubed sweet potato
π± 1 cup baked & cubed butternut squash
π± 1 cup baked garbanzo beans (u will bake all 3 at 425F for 35 min in avocado oil, salt, pepper and garlic). I add paprika for chickpeas.
π± 1/3 cup dried cranberries (no sugar added)
π± 1/3 cup pumpkin seeds
π± 1 apple, chopped
π± 1/4 cup chopped pecans
β¨ DRESSINGβ¨
π± 1/4 cup hummus
π± 1 tbsp olive oil (optional)
π± 1/2 lemon, juiced
π± 1 tbsp tamari (gf soy sauce) or water
π± Spices- I did salt, pepper and garlic to taste
π± water if needed to thin
Directions
β¨ INSTRUCTIONSβ¨
π± Bake your veggies and beans. Put it all together in a bowl. Mix the dressing in a jar, pour over and serve.
