Gluten & dairy FREE SMASHED POTATO PIZZA

Ingredients
✨ INGREDIENTS✨
🌱 24 oz small potatoes or baby potatoes or creamer potatoes
🌱 avocado oil & sea salt (or celtic)
🌱 1 cup clean marinara sauce
🌱 2 cups cheese of choice (I used DF)
🌱 7-8 cherry tomatoes, sliced, optional
🌱 7-8 kalamata olives, optional
🌱 5-6 asparagus ends, optional
🌱 1/3 cup giardiniera, optional
🌱 Oregano to top
Directions
✨ INSTRUCTIONS✨
🌱 Clean the potatoes then boil by putting them in a salted boiling water for 15 min. Drain and transfer to a lined baking tray and smash with a glass or hand. Brush with oil & sprinkle salt. If using DF cheese add the sauce, cheese and topping of choice at this point and bake 30-45 min depending on cheese and potatoes (u want them to look crispy). If not using DF cheese bake potatoes 15 min on their own then add toppings and continue baking until cheese melted.

INGREDIENTS
1/2 cup quinoa 200g chocolate 1/4 cup almond butter
INSTRUCTIONS
Fry quinoa in a non- stick pan (with non- toxic coating) for a couple minutes until golden. Add to melted chocolate along with the nut butter. Divide and place into mold, and set in the fridge for 45min.
