GF/ DF RASPBERRY- LIME CHEESE CAKE

Ingredients

✨ INGREDIENTS✨

🌱 3/4 cup almonds
🌱 1/2 cup oats
🌱 12 pitted Medjool dates

🌱 2 cups cashews, soaked for 30 min in warm water
🌱 1 can coconut cream
🌱 1/4 cup maple syrup

🌱 1 cup raspberry jam (or make my recipe)
🌱 3 limes, juice + zest
🌱 double pack raspberries

Directions

✨ INSTRUCTIONS✨

🌱 Make a crust out of the 3 ingredients and press onto 8×8. Let it set in fridge while working on cream. Combine the 3 main cream ingredients and blend, then split into half. Add a couple table spoons raspberry jam into one and lime juice + zest onto the other one. Pour 1/2 of your pink cream then rest of the jam then other half of pink cream and place raspberries on top. Set in freezer for 15. Pour lime cream and sprinkle some lime zest on top. Let it set in freezer for couple hours.

    INGREDIENTS

    1/2 cup quinoa 200g chocolate 1/4 cup almond butter

    INSTRUCTIONS

    Fry quinoa in a non- stick pan (with non- toxic coating) for a couple minutes until golden. Add to melted chocolate along with the nut butter. Divide and place into mold, and set in the fridge for 45min.
