EASY CHICKPEA CURRY anti- inflammatory and delicious

Ingredients

✨ INGREDIENTS✨

🌱 1 yellow onion, finely chopped
🌱 4 cloves of garlic, minced
🌱 1 bell pepper, finely chopped
🌱 1 inch ginger, grated
🌱 2 tomatoes, finely chopped
🌱 1 can chickpeas, drained & rinsed
🌱 1 can coconut milk
🌱 1 tsp each turmeric, cumin, curry & garam masala
🌱 salt and pepper to taste

🌱 1 bunch cilantro
🌱 squeeze of lime (optional)

Directions

✨ INSTRUCTIONS✨

🌱 In a bit of avocado oil on medium heat add your veggies one by one and sauté each time for a couple of minutes. After adding everything but cilantro let it simmer for about 15 minutes. If you want it to thicken up add some coconut flour. Mix in cilantro in the end and serve with rice or your grain of choice.
