CHOCOLATE PISTACHIO DATE BARK

Ingredients

✨ INGREDIENTS✨

🌱 12-15 pitted Medjool dates

🌱 1/2 cup nut butter (i used coconut-cashew)
🌱 3 tbsp unrefined coconut oil, melted
🌱 3 tbsp maple syrup
🌱 3 tbsp cacao, carob or protein powder (i mixed)
🌱 1/2 cup pistachios, roughly chopped

🌱 150g chocolate
🌱 1/4 cup nut butter or coconut cream

✨ INSTRUCTIONS✨

🌱 Place soft dates facing down until the bottom is well covered. In a bowl mix the first batch of ingredients until smooth, fold in pistachios and pour over dates. Leave in fridge while working on the next layer. Melt chocolate and coconut cream or nut butter and pour on top then optionally top with more pistachios. Let it fully set in the fridge before cutting.

    INGREDIENTS

    1/2 cup quinoa 200g chocolate 1/4 cup almond butter

    INSTRUCTIONS

    Fry quinoa in a non- stick pan (with non- toxic coating) for a couple minutes until golden. Add to melted chocolate along with the nut butter. Divide and place into mold, and set in the fridge for 45min.
