BAKED LENTILS FALAFEL prepped in 10 min

Ingredients

✨ INGREDIENTS✨

🌱 1 cup lentils of choice (i used red)
🌱 1 shallot
🌱 3 cloves of garlic
🌱 Handful cilantro
🌱 1 tsp cumin
🌱 1/2 tsp chili powder
🌱 salt, pepper to taste
🌱 drizzle of oil

🌱 1/4 cup cassava or garbanzo flour

Tahini sauce:

🌱 1/4 cup tahini
🌱 1 tbsp plant- based yogurt
🌱 1/2 lemon juiced
🌱 salt, pepper, garlic
Add water if needed to thin

Directions

✨ INSTRUCTIONS✨

🌱 Soak lentils in hot water for 1h. Pulse shallot, garlic and cilantro. Add drained lentils, oil and spices and pulse again to reach slightly chunky consistency. Add flour, form balls and bake at 400F for 20 min
🌱 I assembled with my 2- ingredient Naan, cucumbers, spinach, tahini sauce and a bit of sriracha
