ANTI- INFLAMMATORY SHEET- PAN DINNER

Ingredients
✨ INGREDIENTS✨
🌱 1 sweet potato, peeled & cubed
🌱 3 medium carrots, peeled and chopped
🌱 2/3 medium cauliflower head, cut into small florets
🌱 Olive oil (not extra virgin) or avocado oil, salt, pepper and garlic to taste and 1 1/2 tsp turmeric powder (mix veggies well)
🌱 1/4 cup pine nuts
🌱 1/4 cup sliced almonds
🌱 Handful micro-greens or sprouts
🌱 Drizzle balsamic vinegar
Dressing:
🌱 1/2 cup cashews
🌱 almond milk (enough to submerge cashews)
🌱 big squeeze of lemon
🌱 2-3 tbsp nutritional yeast
🌱 1 garlic clove
🌱 1 tsp turmeric
🌱 salt, pepper to taste
Blend everything
Directions
✨ INSTRUCTIONS✨
🌱 Lay veggies for baking onto a parchment paper, season and bake at 425F for 35 min or so. Add other ingredients, pour over the dressing and when the cleaning time comes just throw out the parchment paper 😍

INGREDIENTS
1/2 cup quinoa 200g chocolate 1/4 cup almond butter
INSTRUCTIONS
Fry quinoa in a non- stick pan (with non- toxic coating) for a couple minutes until golden. Add to melted chocolate along with the nut butter. Divide and place into mold, and set in the fridge for 45min.
