Anti- inflammatory GREEK- INSPIRED CREAMIEST SOUP with lemony cashew cream

Ingredients

✨ INGREDIENTS ✨

🌱 1/2 large yellow onion, diced
🌱 5 cloves of garlic minced
🌱 4 cups low sodium vegetable broth (veggies & spices only)
🌱 4 cups purified water
🌱 2 carrots- peeled and finely chopped
🌱 3 celery sticks, finely chopped
🌱 2 cans chickpeas (drained & rinsed)
🌱 1/2 cup ancient grains or quinoa
🌱 1 cup cashews
🌱 2-3 cups kale, chopped
🌱 1 lemon, juiced
🌱 2 tsp turmeric
🌱 salt, pepper, garlic powder, oil of choice

Directions

✨ INSTRUCTIONS✨

🌱 Combine cashews, 1 cup water or plant milk and 1 lemon juiced in a blender and blend till smooth
🌱 In a bit of oil sauté your onion for a few min then add garlic for another 1-2 min
🌱 Add carrots, celery, broth, water & spices to taste (salt, pepper, garlic) & turmeric and bring it to a boil then add chickpeas
🌱 Reduce to low heat and let it simmer for 20 min then add ancient grains or quinoa and simmer for another 15 min
🌱 Stir in kale and lemon- cashew cream and combine, add more spices to taste and serve
