4 LAYER BLUEBERRY CHEESECAKE that heals

Ingredients

Crust:
🌱12 pitted Medjool dates
🌱3/4 cup almonds
Layer 1:
🌱 2 1/2 cups raw cashews (soak in boiling water for 30 min)
🌱 1/2 cup coconut cream
🌱 1 lemon, juiced
🌱 1/3 cup maple or date syrup
🌱 splash vanilla (optional)
🌱 1/4 cup blueberries
Topping:
🌱1 1/3 cup frozen wild blueberries
🌱2-3 tbsp maple or date syrup

Directions
✨ INSTRUCTIONS✨
🌱 In a food processor blend your crust ingredients to make dough and press into parchment paper lined 6” cake mold.
🌱 Combine layer 1 ingredients in a blender and blend. Pour 1/2 of it onto the crust layer and set in the freezer for 1h. Add 1/4 cup blueberries to that 1/2 remaining, blend and pour over layer one after you took it out of freezer. Let it set 30 min in the freezer
🌱 Blend the top layer and pour on top decorating with more frozen blueberries. Let it set for another 30 and serve!

INGREDIENTS
1/2 cup quinoa 200g chocolate 1/4 cup almond butter
INSTRUCTIONS
Fry quinoa in a non- stick pan (with non- toxic coating) for a couple minutes until golden. Add to melted chocolate along with the nut butter. Divide and place into mold, and set in the fridge for 45min.
