✨ WORLD’S TASTIEST WARM SALAD 🤤

I used to think healthy eating is so boring, tasteless and with very limited options! You’ll agree, if you hear me saying I eat plant- based, gluten- free, without refined sugars, frying and seed- oils- you’d think my life is sad. I’ve actually heard that before. Last time I heard is was from the nurse when they were prepping me for a CAT scan while loading me up with coloring that contains heavy metals with a high dose of steroids to follow. No, my life isn’t sad! Actually, I’ve never been happier, and I’ve never been healthier, because I won! My disease is my biggest super power! I want you to gain yours ❤️

Ingredients

✨ INGREDIENTS✨

🌱 2-3 cups greens of choice (I used mixed greens with sweet pea leaves, baby spinach, baby bok choy, baby kale, mizuna and tatsoi)- the more greens the marrier (you and your gut)
🌱 1/2 cup uncooked forbidden rice (cook by package instructions)
🌱 1 smaller sweet potato (peeled, sliced and roasted)
🌱 1/2 can chickpeas (drained, rinsed and roasted)
🌱 1/3 cup red cabbage sliced
🌱 Dressing of choice (read further for this delicious creamy dressing)

Directions

✨ INSTRUCTIONS✨

🌱 Roast sweet potatoes and chickpeas at 425F for 35 min, flipping over after 20 min. I coated both in salt, pepper and garlic powder and added paprika for chickpeas. Cook rice according to package instructions.
🌱 Assemble the salad by laying a bed of greens then dressing (it will be more flavorful), rice, potatoes, chickpeas, cabbage and dressing again
🌱 If you want to make the same dressing you will combine 1 handful cashews, enough almond milk to cover the cashews, 1 garlic clove, squeeze of lemon, salt, pepper, 1 tbsp of nutritional yeast and 1/4 tsp turmeric and blend until creamy. For me this is the best dressing in the world!
