Ingredients
✨ INGREDIENTS✨
🌱 1 cup uncooked forbidden rice
🌱 1 cup shredded red cabbage
🌱 1 heaping cup greens of choice (i used baby greens & micro greens mix)
🌱 1 cup steamed peas or edamame
🌱 1 cup peeled and cubed sweet potato
🌱 1 cup peeled and cubed butternut squash
🌱 1 pack (10oz) organic, hard tofu (pressed)
✨ SAUCE✨
🌱 1/3 cup almond butter
🌱 1/2 orange juiced
🌱 2 tbsp maple syrup
🌱 2 tbsp tamari sauce (Gluten- Free soy sauce)
🌱 1 garlic clove
🌱 Salt to taste
Directions
✨ INSTRUCTIONS✨
🌱 Blend the sauce ingredients in a blender. Place your tofu cut into squares and potato and squash onto parchment paper. Season veggies with some oil, salt, pepper and garlic powder to taste. Brush tofu with the sauce. Bake at 425 F for 35 minutes.
🌱 In the meantime cook rice according to package instructions and steam peas (or boil edamame)
🌱 Assemble the bowl
