ANEMIA- FIGHTING DAIRY- FREE BEET TZATZIKI

Anemia is something a lot of women deal with, and it especially worsens when on period. IBD also causes a lot of iron/ ferritin issues. The first time in my life that I am not struggling with iron is the time I am plant- based, eating a ton of greens, and beets (juiced or in a salad) paired with vitamin C.
Ingredients
✨ INGREDIENTS✨
🌱 1 cup yogurt (I used Greek- style almond)
🌱 1 English cucumber, finely chopped
🌱 1/3 cup dill, very finely chopped
🌱 1 small beet, finely grated
🌱 1/2 lemon, juiced
🌱 Drizzle olive oil
🌱 Salt and pepper to taste
🌱 3 cloves of garlic, crushed
Directions
✨ INSTRUCTIONS✨
🌱 Combine everything and serve. I used my 2- ingredient naan (bread) with it, but options are endless.

INGREDIENTS
1/2 cup quinoa 200g chocolate 1/4 cup almond butter
INSTRUCTIONS
Fry quinoa in a non- stick pan (with non- toxic coating) for a couple minutes until golden. Add to melted chocolate along with the nut butter. Divide and place into mold, and set in the fridge for 45min.
