Ingredients
✨ INGREDIENTS✨
Wet:
🌱 1 cup almond milk
🌱 1/3 cup melted unrefined coconut oil
🌱 3/4 cup coconut sugar
🌱 2 medium apples
🌱 splash vanilla
Dry:
🌱 2 cups almond flour
🌱 2 cups ground rolled oats
🌱 1/4 cup ground flaxseed
🌱 1 tbsp baking powder
🌱 1 tsp each nutmeg, cinnamon & ginger
🌱 1 1/2 cups grated carrots
🌱 3/4 cup chopped pecans
🌱 1/4 cup dried cranberries (sugar- free)
✨ FILLING✨
🌱 2 cups cashews, soaked
🌱 1/2 cup coconut cream
🌱 1/3 cup maple syrup
Directions
✨ INSTRUCTIONS✨
🌱 Peel and cube apples, throw into boiling water and boil for 10 minutes then blend to get apple sauce.
🌱 Combine and mix wet ingredients. Add dry ones, then mix in carrots, nuts and cranberries.
🌱 Divide batter into 2 8” or 9” cake pans lined with parchment paper and slightly greased and bake at 350F for 25-30 min. Let if full cool off
🌱 Blend filling ingredients
🌱 Stack the cake, decorate and serve
